Fresh Picks Menu Planning

This week we got oranges, Fuji apples, strawberries, red potatoes, peas, beets, napa cabbage, chard, raddichio and eggplant. Here's what's on the menu this week:

beet salad and eggs in a nest (finally getting around to this one)
salmon cakes with roasted potatoes and peas
eggplant and raddichio parmesan over pasta primavera
apple tart (still have some apples leftover from last week)
