Lemon Vinaigrette Dressing

I really love this lemon vinaigrette dressing, especially for the roasted beet salad. Combined with the feta and onions and sweet beets, it's a perfect complement. This recipe is another twist on my standard vinaigrette dressing recipe. While this recipe is portioned to make 2-3 servings (perfect for the beet salad), it's very easy to make more or less, adjusting the ratios. Just like I mentioned in my standard recipe, I like a more acidic dressing.  If you prefer a mellower taste, increase the oil portion slightly.

Lemon Vinaigrette Dressing
(makes 2-3 servings)
Ingredients
1 1/2 tbsp olive oil
1 tbsp red wine vinegar
1 tbsp lemon juice
pinch of dried oregano
salt and pepper to taste

Directions
1. Combine all ingredients in a small container with a good lid.

2. Right before serving, shake vigorously to mix and pour over salad.

How easy is that!?

Almost Home-Made Spaghetti Sauce

Home-made pasta sauce is delicious, but also quite time-consuming. So I've found a great almost home-made pasta sauce that's easy to make. This recipe makes enough for a dinner, left-overs, and two jars worth to freeze for another time.

Ingredients:
1 tbsp olive oil
2 tbsp chopped garlic
1/2 white onion, chopped
1 1/2 lbs lean ground turkey (ground beef also works)
1/2 green bell pepper, diced
2 carrots, sliced
1 can stewed tomatoes, drained
5-7 basil leaves, julienned
2 small zucchini, sliced
2-3 handfuls fresh baby spinach
salt, pepper and oregano to taste
2 jars plain store-bought marinara

Directions
1. Heat the olive oil in a large skillet over medium-medium high heat. Add the chopped garlic and cook until light brown.

2. Add the onion to the skillet and continue to cook until the onions are translucent.

3. Add the ground turkey and cook until done.

4. Add the peppers and carrots and cook for 3-5 minutes, stirring all the ingredients to mix well.

5. Add the stewed tomatoes and mix well. Reduce the heat to medium.

6. Add the zucchini and basil and stir. Let cook for 5 minutes.

7. Add the spinach and stir. Cook until the spinach is wilted.

8. Add in the 2 jars of store-bought sauce. I like to use a plain garlic and tomato based sauce. There's no need to get a fancy flavor since you're adding good stuff that's fresh. Hang on to the jars for freezing the extra sauce you've made. Mix well and reduce heat to simmer.

9. Let the sauce simmer until veggies are tender, but not mushy. Reserve what you're planning to eat that week and freeze the rest in the store-bought jars.
