Pizza Pockets

I was at a loss for dinner the other night. There was no thawed meat. No set menu. Just a fridge full of random items. After scanning the shelves, I came up with Pizza Pockets, a quick and easy fix. I found this to be an easy hot lunch to take. The pita doesn't get soggy, and it's easy to heat up at work.

Ingredients
2 whole pitas, split
1/4 onion, sliced
1 1/2 cups low fat mozzarella cheese, shredded
4 slices of tomato
1 cup marinara sauce
handful of spinach leaves
parmesan cheese
basil

Directions
1. Fill each pita half with spinach, tomato, onion, and mozzarella.
2. Top with parmesean and basil.



3. Cook in a toaster oven on broil for a couple minutes or until the cheese is melted and the pita is a bit crunchy.

4. Serve with a cup of marinara for dipping.
Makes 2 whole pitas, enough for 2 people when served with a salad.
