Tomato, Cucumber and Feta Salad
This is a great easy salad to make for a summer afternoon or anytime. It can be served on its own or over a bed of lettuce or pasta. It's light, cool and flavorful.
Ingredients
1/2 cucumber, sliced and quartered
1 large tomato, sliced
1 medium red onion, chopped
1/3 cup feta cheese crumbles
2 tbsp olive oil
1 tbsp red wine vinegar
juice of one lemon
salt and pepper to taste
Directions
1. In a small mixing bowl, combine oil, vinegar, lemon juice and salt and pepper. Mix well.
2. In another bowl, mix cucumber, onion and feta. Pour on the dressing and stir gently to coat, but make sure not to "bruise" the cucumber.
3. Cover and refrigerate for 2 hours.
4. Slice tomatoes and arrange around the edge of the plate. Scoop the cucumber mixture into the center of the plate. Top with fresh ground pepper (optional) and serve.
*Note: cucumber mix in dressing will stay good in the frige for up to 2 days, but is best when it's served the day of.
