Grilled Summer Vegetable Flat Bread Pizza

I am obsessed with flat bread pizzas these days. I can't seem to get enough. They are so simple and so diverse. With dozens of fresh toppings, the combinations are endless. And the best part: by grilling these, you don't have to heat up the kitchen to cook a delicious meal.

Ingredients:
store-bought pizza dough
1/2 orange bell pepper, sliced thin
1 small zucchini, sliced thinly lengthwise
1 small yellow squash, sliced thinly lengthwise
1/2 cup diced red onion
1 cup grape tomatoes, halved
3 slices turkey bacon, cooked and chopped
1 cup marinara sauce
1/3 cup goat cheese crumbles
3-4 basil leaves, julienned
2 cups shredded mozzarella cheese
olive oil
salt and pepper to taste

Directions:
1. Heat the grill to 350/medium heat. While grill is heating, mix squash and peppers with olive oil and salt and pepper.

2. Place the veggies on the grill. Cook 3-4 minutes on each side.

3. While veggies are grilling, prep the other veggies and cook the bacon.


4. Roll out the dough. You can use home-made dough, but on a week-day evening, I prefer store-bought ready-to-use dough. Spread the sauce thinly on the dough.

Note: I find it easiest to place the rolled out dough on tin foil. Then use a pizza stone or cutting board to transfer the pizza to the grill. Cook the pizza on the foil to prevent sticking to the grill.

5. Add the grilled veggies, onions, tomatoes, basil, bacon, and goat cheese.

6.Top with mozzarella cheese.


7. Place pizza on the grill and cook on medium heat until cheese is bubbly and melted and the edge of the crust is a light golden brown. When you lift the edge of the crust, it should hold it's shape and not feel soft/malleable.
