This week I'm planning three dinners. I'll be making double portions of the two chicken meals, so we'll have leftovers. But I'm only making one night's worth of the swordfish since seafood never tastes as good when it's warmed up.
So here's what the FoodWhore is cooking this week . . .
#1: Ginger Grilled Chicken with stir-fry veggies and salad. I'll admit I'm cheating a bit on this one. I found a great Ginger Wasabi marinade at the store last week that I want to try and our grocery store sells stir-fry veggies already prepped and mixed together. Sometimes ya just gotta take the easy way out, especially on a Monday! I might make some rice to go with this as well--just depends how hungry I am.
#2: Mediteranean Grilled Chicken. Grilled chicken breasts topped with a Mediteranean Mix (artichoke hearts, sun-dried tomatoes, garlic, goat cheese, and basil). Served with french bread, asparagus, and a salad.
#3: Grilled Swordfish Steaks with grilled summer squash, white rice, and a salad.
Here's your shopping list for these meals--and keep in mind, I've omitted the basic staples that most people have on hand.
8 chicken breasts (Or you can cut this in half and just butterfly larger breasts to make them go further)
ginger marinade--check your grocery store for your favorite or try something new
stir fry veggies--my store sells them together or try brocolli, snow peas and sprouts
2 bags salad mix
pint grape tomatoes (optional for salad)
1 onion (optional for salad)
sunflower seeds (optional for salad)
calamata olives (optional for salad)
feta cheese crumbles (optional for salad)
sun-dried tomatoes
small jar artichoke hearts
goat cheese crumbles
1 "head" of garlic
fresh basil
aspragus (thinner stalks are better)
french baguette
2 swordfish steaks (be sure to ask the seafood guy/gal for steaks of similar thickness since you'll be grilling them and you want the cook times to be the same; (s)he should also be able to tell you how big of a steak you will need for a single serving)
white rice
yellow squash (3 good sized squash should be enough for 2 servings)
