Almond Dijon Chicken

Talk about a simple meal. This deliciously flavorful meal took all of 5 minutes to prepare. This is definitely a non-cook's meal. If you know someone who is kitchen-challenged, pass this recipe along to them.

Ingredients
4 chicken breasts, boneless & skinless
2 tbsp mayo
2 tbsp dijon mustard
1/3 cups crushed almonds

1. Mix mayo and mustard.

2. lay the chicken breasts in a greased baking pan

3. spread the mayo mixture over the chicken breasts.

4. Sprinkle with almonds.

5. Bake for 25 minutes at 375.



Yes, that's it. I served this with sauteed squash and spinach and some leftover cornbread. It was so tasty. I sauteed the veggies while the chicken was cooking. The only thing I would do differently next time is make sure the almonds are chopped really fine--maybe even put them in the food processor. Mr. Food Whore suggested slivered almonds. The bigger pieces were a weird contrast in texture, but still delicious.
