Spicy Veggie Burgers



I'm not even going to claim to have created this. This burger was a staple at the deli I worked at in high school, and I loved it. There's not too much that's home-made about it, but it is quite tasty and healthy.

Ingredients:
1/4 red bell pepper, diced
1/4 yellow bell pepper, diced
1 jalapeno, diced
1/2 tomato, diced
1/2 cup red onion, diced
3 tbsp lime juice
1 tbsp olive oil
salt and pepper to taste
sprouts
cucumber, sliced
Morning Star Black Bean Burgers
bagels, any non-sweet variety (onion, wheat, everything, etc)
dijon mustard
provolone cheese


Directions
1. To make the salsa topping, combine the first 8 ingredients in a small bowl and let sit overnight...if you can't do overnight, try to do at least an hour to let all the flavors get good and juicy.

2. Prepare the black bean burgers according to the package. While they are cooking, warm the salsa in a small sautee pan.

3. When the burgers are almost done, scoop some salsa on top and melt cheese over it.

4. Toast the bagel lightly and dress with mustard, cucumbers and sprouts. Add the burger and enjoy!
